so despite my self-professed dislike of all things kitchen, today i found myself in a foodie mood, so i made several dishes that all turned out delicious! i thought i'd share.
first, for breakfast, pumpkin oatmeal, from my sister-in-law shelley. scrumptious!
to a bowl of hot oatmeal add a heaping spoonful of pumpkin puree and top with brown sugar, pecans and milk. very, very easy and so delicious!
for lunch, chicken salad, recipe courtesy of my friend bekah.
i shredded two cooked chicken breasts and added mayo, diced celery and red onion, chopped apple, dried cranberries, chopped pecans, garlic powder and salt. YUMMO! i have been singlehandedly working my way through the leftovers (and a container of lemon hummus, what can i say) throughout the day today.
this afternoon i made peanut butter balls with the kids from a recipe i made as a kid out of a really old kids' cookbook! the fact that i find them as addicting as the kids is probably not a good thing.
mix 1/2 c. peanut butter, 1/4 c. coconut, 2.5 tbsp. dry milk, 2 tbsp. raisins, and 2 tbsp. honey in a bowl. form into balls and roll in wheat germ or sesame seeds and refrigerate. seriously? these are really good. it may be partly due to the fact that i made and ate them a lot growing up, so.... you like what you grew up on, right? anyway, whatever it is, they are scrumptious.
and when i was done with the pb balls i decided since i had the coconut and sesame seeds out i should whip up a big batch of granola. i LOVE homemade granola! so that's in the oven now, and i'll probably be eating it for dinner (i'm making omelets for the kids; dan has a late meeting tonight.)
hmm. i'm thinking maybe i should reconsider my dislike of cooking? it's just so... annoying... to have to cook dinner, every night. year after year after year. not that i'm complaining, cause seriously, i never do (not about having to cook at least!) i'm just thinking that it might account for my dislike of it.
